Ramen (ラーメン rāmen, IPA: [ɽäꜜmeɴ]) is a Japanese noodle soup dish. It consists of Chinese-style wheat noodles served in a meat- or (occasionally) fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork (チャーシューchāshū), dried seaweed (海苔 nori), kamaboko, and green onions. Nearly every region in Japan has its own variation of ramen, from the tonkotsu (pork bone broth) ramen of Kyushu to the miso ramen of Hokkaido.

“Of those ramen-serving places, Ginza is the new kid in town. It’s pint-sized, seating 30 at most, and in keeping with its Elgin Street location it adds a lounge vibe to its mix and is open till 2 a.m. on weekend. But while there’s some cross-cultural frivolity in such decorations here as the images of Bruce Lee DJing and Ninja Marilyn Monroe, Ginza does get serious about its Japanese soup.”

We didn’t understand a word but sang along, and the owners gave us free sake on the house (for participating I presume) Very warm and friendly environment!”
